Watermelon Pizza Recipe

It’s summertime and that means juicy watermelon!  I have the perfect, healthy watermelon pizza to satisfy your sweet tooth. This is super-easy and very simple to make – it takes just minutes to put together.

Summertime Watermelon Pizza

 

Watermelon is a wonderful, juicy and delicious treat that is actually lower on the glycemic index which means your blood sugar won’t skyrocket. The watermelon, kiwi, strawberries, and raspberries are all not only delicious low-sugar fruits, but alkaline as well. Adding alkaline foods and water to your diet will help protect you from an acidic body, and that will protect your health.

All berries rate very high on the ORAC scale (Oxygen Radical Absorbance Capacity). It’s a lab test that attempts to quantify the “total antioxidant capacity” (TAC). But the berry with highest ORAC rating are blueberries.

Ensuring that you have nutrient-rich foods at each meal will protect your health, boost immunity and give cells the nutrients they need to optimize your health.

Here is your delicious Watermelon Pizza recipe!

Ingredients

Watermelon

1 8 oz. Greek Lime Yogurt

Raspberries, blueberries, strawberries, kiwi or any of your favorites

Fresh mint (optional)

 

Directions

  1. Cut a slice of watermelon right down the middle, about 2-3 inches thick.
  2. Spread an even layer of your yogurt around the watermelon slice leaving a bit of empty space at the edge (the crust).
  3. Add as many fruits, berries and mint as you wish.
  4. Slice the ‘pizza’ into quarters or smaller.
  5. Enjoy!

Ingredients

Directions

  1. Add ingredients to a single serving glass mason jars or bowl.
  2. Let settle for 2 minutes and mix with fork to remove and prevent clumping
  3. Cover the jars or bowl and store in the refrigerator at least 7 hours or overnight.
  4. When ready to eat, top with your favorite fruit or berries. Enjoy!

 

*Chia seed pudding can be stored up to a week in the refrigerator.

Ingredients

1 Dragon Fruit

2 Cups Mixed Fruit such as raspberries, blueberries, kiwi and mango

1 Tablespoon Chopped Fresh Mint Leaves

1 Tablespoon Organic Honey or 8 Drops Stevia

 

Directions

  1. Slice dragon fruit in half, lengthwise.
  2. Using a melon baller, scoop out dragon fruit making small fruit balls, set aside.
  3. Scrape out the excess dragon fruit to create an empty shell
  4. Chop kiwi and mango into small bite-size pieces.
  5. In a separate bowl, mix equal amount of raspberries, blueberries, kiwi, and mango with dragon fruit balls.
  6. Add mint.
  7. Mix-in honey or stevia and mix.
  8. Serve and enjoy!
