Eat the Rainbow Part I : Gorgeous Greens!

 
Even if we struggle to stick to it all the time, most of us have a pretty good idea how to eat healthily.  Fruit, vegetables = good. Too much sugar, salt and fat = bad. Yep. We can remember that.

But when you’re choosing what to buy at the grocery store, bear in mind that fresh produce in different colors doesn’t just look good in the fruit bowl – it’s great for your health as well!

We take a look at why we tell our kids to eat their greens and why our parents and their parents before them, told us the same thing!

Green is good for you.  Dark green leafy plants such as spinach, kale and collard greens are packed with more vitamins, minerals, antioxidants and fiber than pretty much any other type of food.  In fact, one cup of kale contains 134 percent of your daily vitamin C requirement and an amazing 684 percent of the recommended amount of vitamin K!

These nutritionally-dense green plants really earn their stripes as superfoods, and can be enjoyed steamed, smoothie’d, sautéed or even raw!  

Get Growing!

The other great thing about leafy greens is that they’re among the easiest things to grow in your backyard vegetable patch.  Baby leaf spinach can even be raised happily on a sunny window-ledge, if you don’t have any outdoor space!

But if you don’t have the means or desire to grow your own leafy greens, then you can find all kinds of delicious varieties at the store.   However, unless you buy organically, it’s impossible to know what herbicides and pesticides your healthy greens have been sprayed with.
