 A Tasty Summer Salad From Tyent USA!

 

 

Chicken-salad-on-a-croissant     With summertime, comes outdoor activities, spur of the moment get togethers, picnics, fun and more.

I live in the south but believe that bringing along a delicious side dish to enjoy is a tradition everywhere and anywhere that food, friends and family gather.

Chicken salad is a can’t miss dish that nearly everyone enjoys eating and this special recipe offers up a new twist on an old favorite that you can whip up in less than thirty minutes. 

My wife makes this and it’s a big hit with everyone who trys it.

With a savory combination of Parmesan cheese, toasted pecans and a little spicy brown mustard, this tasty tongue tingler will ensure that your chicken salad stands out from the crowd.

Parmesan Chicken Salad

 

Prep: 10 minutes     Cook:  16 minutes

 

You will need:

 

4  skinned and boned chicken breasts

 

1  teaspoon of salt

 

½  teaspoon of pepper

 

2  tablespoons vegetable oil

 

¾  cup freshly grated Parmesan cheese

 

½  cup chopped pecans (toasted)

 

½  cup chopped celery

 

1/3  cup chopped green onions

 

¾   cup mayonnaise

 

2   tablespoons spicy brown mustard

 

1  garlic clove pressed (I use fresh garlic from a jar)

 

To Prepare:

 

Sprinkle chicken with salt and pepper.  In a large skillet, heat oil and cook the chicken over medium-high heat 7 to 8 minutes on each side or until it’s cooked the way you like it; cool.  Chop the chicken up.

 Stir together the chopped chicken, cheese, and the next three ingredients.

 Stir together the mayo, mustard, and garlic, then add to the chicken salad and stir well.  Cover and chill.

And there you have it, a jazzed up version of the classic chicken salad recipe that is sure to be a real crowd pleaser or merely enjoyed at home.
