Millions of people across this great nation are going to be firing up the ‘ol grill this Friday as family and friends gather to celebrate the freedom and independence we are so blessed to enjoy in the greatest country the world has ever known, America.

There is something special about a cookout.  It brings people together to combine good food and good friends with a good time.

Barbecuing on the Fourth of July is an American tradition so we felt it only fitting that with the Fourth only two days away, what better time to offer up a mouth-watering recipe for barbecued ribs?

That smell of smoke rising from the grill makes our mouths water and our stomachs growl.  But what if it’s raining where you are and you can’t grill out as planned?  Enter, Rainy Day Ribs.

This simple but delicious recipe is the perfect alternative and the next best thing to grilling out because you can still enjoy a rack of delicious barbecued ribs…rain or shine!  

This honey-based sauce recipe has some sweetness and some kick.

To make the sauce:

1 cup – Honey

1 cup – ketchup

½ cup – apple cider vinegar

2 tablespoons – reduced-sodium soy sauce or tamari

2 – Canned chipotle chilies in adobo sauce, stems trimmed, chopped (only 2 chilies, not 2 cans)

2 tablespoons – adobo sauce (from the can of chilies)

2 teaspoons – chili powder

1 teaspoon – ground cumin 1 teaspoon – fresh garlic, grated

1 teaspoon – coarse salt

To make the sauce, place the honey, ketchup, vinegar, soy sauce, chipotles, adobo sauce, chili powder, cumin, garlic, and salt in a small saucepan.  Heat on medium-low heat until sauce is simmering.  Cook, uncovered, for 5 minutes and let cool.

BBQ Ribs

For the Ribs:  

2 Racks of your favorite ribs (pork or beef) about 2 ½ lbs. each with each rack halved

Some course salt and freshly ground pepper

Rub the ribs on both sides with a little salt and some black pepper. Place them in a 2-gallon, re-sealable plastic food storage bag and add the cooled sauce.  Place in the refrigerator for 4 to 24 hours, turning the bag occasionally.  You can prepare these ribs in the morning and enjoy them that afternoon.

When you are ready to cook, preheat the oven to 350°F.  Line a large roasting pan or a rimmed sheet pan with aluminum foil for an easy cleanup.  Place a rack in the pan and put the ribs on the rack.  Pour the BBQ sauce into a saucepan and heat gently over medium heat for about 5 minutes.  Brush the ribs with the BBQ sauce. Bake the ribs for 1½ to 2 hours, brushing them with a little sauce while turning them every 20 minutes or so until the meat begins to pull away from the bone.

These ribs can be prepared ahead of time and left to stand for up to 2 hours either in a cool kitchen or in the refrigerator.

Preheat the broiler on high. Brush the ribs lightly with the sauce and broil for about 2 minutes, or until browned and bubbly.

On the stove top, bring the leftover sauce to a gentle boil and simmer for a few minutes before serving.
